Bok Choy and Tofu Stir Fry

Good morning, Sunshines! Hope your weekend was everything you wanted it to be :D Here’s to this week passing by swiftly and gleefully!

Yesterday morning after breakfast, I met Heidi for a booty-kicking workout. First we did 30 minutes of lower body, then ran an easy 4 mile recovery run, and finished ‘er out with some ab work.Total time 1 hr. 30 minutes.

I have trouble fitting in ab work, just because I find it fairly boring because I usually just go back to some form of crunches. But there’s so many awesome not boring ab workouts out there! Soon I’m planning on compiling a ab exercise favorites vlog :)

Came home from the gym and made lunch for the husband and myself. Since it was Sunday,and I had a little extra time on my hands, I tried out a new recipe from Vive le Vegan!

Southwestern Squash Pizza:

SO good. And it only took about 30 minutes to make! Seriously, I wish I would have come up with the recipe just so I could share it with you guys!! That good:) The squash sauce is the best part. I made Shane’s with mozzarella on top, and mine with goat cheese. Delish!

The rest of the day consisted of laundry, cleaning, a trip to the grocery store, and relaxing with the new Runner’s World. Perfect little Sunday if ya ask me :D

And then before dinner, Shane got home and we decided it was time for happy hour! We each had a glass of this fine wine:

After hangin’ out for a few, I got started on dinner. Earlier this weekend, I was telling Shane how he doesn’t like many veggies, and he proved the contrary, telling me many he did like! I was very surprised to hear him say Bok Choy! Naturally, I picked one up at the grocery store, and dinner was decided.

Bok choy Tofu (chicken for him) Stir Fry!

It was so simple to make this, and it turned out SO gourmet!

First I pressed and cubed some extra firm tofu, and marinated it in a baggy w/ 2 T. tamari and 1 t. fresh grated ginger for about 15 minutes. Place marinated tofu on a greased baking sheet and put in a 375 degree oven for 25 minutes, flipping half way through.
While the tofu was baking, I started on the stir fry!

Stir Fry Ingredients:
1 T. olive oil          
2 t. freshly grated ginger
1 chopped garlic clove
1/4 c. chopped onion
3 bok choy stalks, chopped
1/4 c. water chestnuts
1/4 c. tamari

Heat oil in a pan and sautee garlic, ginger, and chopped onion until soft. Add in bok choy and sauté a few more minutes before adding in the tamari. Finally, toss in water chestnuts and stir fry until warm. Mix in the rice as your very last step, and voila – Stir Fried Bok Choy and Tofu!

So delicious! I’m sure I could have added a few more veggies, but I didn’t want to scare off the hubski ;)

After dinner, we watched what was left on the Acadamy Awards, and I had a little night cap:

Oh, Saturday…a Race Recap!

Goooood morning! How has your weekend gone so far? Going great so far here:)

I’m currently digesting a big bowl of banana oatmeal:

Mmmm! To make this I just heated up 1 c. water, 1/2 c. oats, 1 T flax, 1 T. chia, and 1 smashed organic banana on the stove until boiling, then simmered, and added a handful of raisins. Topped it off with some coconut almond butter syrup! To make this, just heat up a little coconut butter, almond butter, and coconut milk in the microwave,stir, and poooour on. SO good, but SO filling. I could only eat about 3/4’s of it.

Yesterday I ran in the first 5k of the year! It was at our city’s zoo – the Zoo Stampede run.

The race wasn’t until 10:00, so I woke up around 7, and made a stabilizing and filling pre-race breakfast made with these ingredients:

Brown rice flour toast – one piece with Earth Balance and organic jelly, and the other with my usual pre-workout snack used as a spread! This spread consists one a half a smashed banana, 1 T. almond butter, cinnamon, and maca.

After hanging around a little while, the hubski and I drove over to the zoo to get our race faces on!

Unfortunately, I forgot to bring the memory card to my camera, and the only pictures I got were after the race:

Albeit not being able to document the race with photos, it went wonderfully! Seriously it couldn’t have been a better day. There wasn’t a cloud in the sky, and it wasn’t extremely cold (mid-upper thirties.) And right before getting in the starting line, I saw Christine (from Fly Runner.) That’s all I saw of her though, because I’m pretty sure she was one of the first few through the finish line!!

After I got my race bib and t-shirt, I had about a half hour before the start, and decided to jog a warm up mile or two. Can you believe this is the first time I’ve actually “warmed up” before a race?! Usually I just use the first half mile or so of the race to warm up, and go from there. Anyway, the warm up must have helped a lot, because the race went great!

My goal was to hold a 9:00 mile for the race. Since my training has really been focusing on distance and mileage as opposed to speed, I wasn’t trying to break any personal records. But to my surprise, I was holding an 8:36 mile quite easily the whole way through! It was really just a nice, relaxing, fun, quick run! The course wasn’t very flat, either! There were probably about 5 hills throughout the course, and I handled them quite well (for me) for not doing any hill workouts. During the last three 10th’s of a mile, I really booked it, and came in 27:03! It’s not a PR or anything, but it’s MUCH better than I had hoped I’d do :D

My mom and dad came to watch, too, and afterward, we all went out to lunch at Fiesta Ranchera, one of the Mexican restaurants in town:

Afterward, we did a little shopping (only to come out unsuccessful – boo:( ) and went to Fresh Market for some goods.

After separating and putting away the groceries, Euchre sounded fun!

The parental unit left shortly after, but the husbski and I weren’t ready to stop the shenanigans. Oh, Saturday. I was super pumped to see Alice and Wonderland, so Shane and I decided to go check it out in 3D!

Shane was just going to have movie popcorn for dinner, but since that ended up being my dinner Friday night, I made myself a pre-popcorn dinner before hand:

This salad was amazingly easy and amazingly tasty. Contained spinach, cucumber, avocado, button mushroom, 1 egg and 1 egg white, and goat cheese.

And of course I munched on some popcorn at the movie as well ;)

It was actually my first time seeing a 3d movie! It took my eyes a bit to adjust, but when they did, I loved it! The movie was pretty good, too. It kept my interest for the whole duration, which is saying something for me.

Now I’m about to go meet my friend, Heidi at the gym for some legs and running, and then to the coffee shop! It’s pretty much become a tradition that we gym it and grab coffee afterwards at least once a weekend :) The rest of my day will be spent doing mounds of laundry and mounds of cleaning! Nothing like putting all that stuff off until Sunday :D

Berries and Cherries

Hi friends!

Three cheers for Friday night! Are you all whoopin’ it up?? I’m afraid there’s no whoopin’ being done over here. I have a 5k to run in the morning, and want to do my bestest. It’s the first one of the year! I did go out tonight, but it was G rated. More on that in a few:)

Since today was a day-before-race rest day, I slept in a little, and woke up with ample time to make a stove-cooked breakfast:

Stovetop oats containing:

  • 1/2 c. oats
  • 1/2 c. water
  • 1/2 c. almond milk
  • 1 T. chia
  • 1 packet of Purevia
  • 1 banana
  • 1 T flaxmeal

Plus a little almond butter swirly to bring everything together. So good I was tempted to lick the bowl!

It also put me in a fabulous mood! Off to work I go…until…I see the berries and cherries. And not the yummy kind :( Yep, got pulled over. Yep, I was speeding. And yep, I got a ticket. URGH! The cop didn’t even give me a chance – he’d made up his mind that he was giving me a ticket when he saw me going 40 in a 30. Although I had it coming, the same policeman pulled over TWO of my friends within the past two weeks. Ruthless, I tell ya! After shedding a few tears and muttering some obscenities, I was back en route to work – obeying the speed limit ;)

To cheer up my not so great morning, I met my friend, Debbie, at Panera for lunch!

Had the vegetable and pesto soup w/ the Mediterranean sandwich on whole grain bread. Aaand perhaps a big ass chocolate chipper cookie…

Side note: I used to work at Panera during college, and I became OBSESSED with this cookie. I also gained 5 pounds ;)

Before I left work I had an unpictured PBJ Lara Bar. It’d been a while since I have had a Lara Bar, and this completely rekindled our love :)

I came home after work, and had about an hour before I had to leave the house, so I baked up a batch of spelt flour and oatmeal cookies from Eat, Drink, & Be Vegan:

My parents are coming up to watch my race tomorrow with the hubski and I always try and have some kind of healthy baked goods for them when they take the time to come visit me. Plus my mom might take me shopping for my birthday (this month!)  ;)

The hubski tried one, and I may have had a half of one (omg, cookie overload today) and we both give it 5 raisins ;)

After the baking quickie, I said goodbye to the husband and Niko…

and met my friend, Carmody at a charity dinner called Empty Bowls. It was a charity event at the local high school, and the students made and painted ceramic bowls to sell for $10. Everyone who went paid $10 for a ticket, and then chose a bowl to take home with them. Then when everyone had their bowls, soup was served!

And since the only vegetarian option was broccoli cheese, I opted for that, but only ate a couple bites. Did eat all the carrots though!

Just got home from the dinner, and made a second (kinda) dinner…

Air popped popcorn + nutritional yeast + sea salt. I prepared it LVAY style by spraying the popped popcorn with olive oil spray before adding the seasonings. Worked perfectly! The spray helps the yeast and salt stick to the popcorn instead of just sinking to the bottom.

Now it’s kinda late and I’m watching 24 with Shane and will probably hit the hay soon. Got an early morning for the race!! It’s supposed to be mid thirties and sunny for the actual race, so that’s pretty good. Early March is iffy weather-wise in Illinois. Still not sure what to wear, though. Perhaps running tights and a long sleeved tech shirt? Maybe a headband or hat? We’ll see (and you’ll see, because you know I’ll write about it!) So excited!!       

 

When is the last time you got a speeding ticket, if ever? Before today, it had been nearly 7 years!! I was going so strong, and then BAM, it happened. But like I said, I had it coming. I’m a speeder, and I need to slow my booty down. I wasn’t even late for work! So there was no reason I should have been going ten over the limit.
