Capping Off the Weekend Right

Good morning! Somehow it’s Monday, yet again. The weeks just pass by so quickly anymore!

After such a great weekend, last night I capped it off the best way I know how – with wine grilling out:

Well, Shane grilled out. While Shane perfectly grille dup two burgers from some beef I picked up at the farmer’s market this weekend, I made the food that can be made inside Winking smile

Like boiled sweet corn and potato salad.

Last week Shane and I went to his grandma’s house for a little gathering, and had cold cuts and the best homemade potato salad I’ve ever eaten. I need to get the recipe from her, but last night I gave it my best shot. It was really freakin’ tasty – but not quite up to par with hers. Perhaps I was just missing the grandma’s touch Smile

Today

This morning I have a client to train here in a few minutes, so when I woke up around 6, I decided to get my workout in beforehand:

and went for a 4 mile run. It’s been a while since I’ve done any kind of speed work or interval running, so this morning I turned my usual 4 mile route into an interval run. Using this playlist, I simply sprinted during the chorus or hook, rather, of the songs and then eased back during the versus (or whatever they’re called. Y’know what I mean, right?Smile)

Post-run greenacolada:

Greenacolada

-1 c. almond/coconut milk

-1 scoop vanilla pp

-1 tsp. chia seeds

-stevia to taste

-1/2 tbsp. coconut oil

-stevia to taste

-handful spinach

-1 c. frozen pineapple

-handful ice

-shredded coconut to garnish

I find adding a little coconut oil to my smoothies – no matter the flavor – helps tremendously to keep my fuller longer.

I actually meant to make this and drink it on the way to my client’s house, but it’s already gone! It’s just so tasty Smile

Instead, I’m sipping on some iced green tea I made over the weekend:

I don’t even know who I am anymore. I’ve never been a tea drinker – I just could never get into it. However, lately I’ve been all about it! I’ve been drinking a mug of sleepy time tea before bed, and iced green tea during the day. I made a huge pitcher on Saturday:

All I did was boil 6 (Green Tea with Kombucha by Yogi) tea bags in my electric kettle in 2 cups of water and let it steep for about 9-10 minutes. Meanwhile, I filled a pitcher with 2 c. cold water. After the 10 minutes were up, I poured the brewed tea into the cold water in the pitcher. Then I added some of the local honey I picked up at the farmer’s market this past weekend:

It’s infused with ginger, and I’m pretty sure I could just eat it straight from the jar Winking smile I got a few other flavors I’m excited to try later, too.
